Baking a Wonder: Cinnamon Nut Cake
There is little better than enjoying a hearty, healthy cinnamon treat with your loved ones. We are certain that this delicious, tasty, nutritious dessert will be one of your favorites. This easy to make cake is full of flavor and aroma and rich in protein, vitamins, minerals and antioxidants.
Ingredients
- 1/2 cup of sunflower oil, corn oil or canola oil
- 1/4 cup of sweetener
- 3 whole eggs or 6 egg whites
- One cup of whole wheat flour
- 1 teaspoon of baking powder
- 3 tablespoons of chopped walnuts
- 3/4 cup of nonfat milk
- 2 1/2 teaspoons of ground cinnamon
Preparation
- Mix the dry ingredients: sugar, baking powder, cinnamon, and flour and set them aside.
- Beat the eggs, milk and oil until well mixed and pour over the dry mixture.
- Mix well with a spoon for 2-3 minutes or with an electrical mixer for 1 minute.
- Add the walnuts and mix gently.
- Preheat oven to 180° C.
- Place the mixture in a greased, 20 cm round cake pan and bake for one hour until risen and browned.
- Take it out of the oven and allow to cool down.
- Cut it into 12 slices.
- Serve with fruit salad to enrich it with fiber, vitamins, minerals and antioxidants and make it more nutritious.
