Maamool Recipe

Makes 19-20 pieces

Cooking Time 35 minutes

Ingredients

  • 2 cups ground Quaker oats
  • ½ cup of flour
  • 1 teaspoon salt
  • 1 teaspoon powdered sugar
  • ½ teaspoon Nigella seeds
  • 1 teaspoon maamool spices
  • ½ cup of oil
  • ½ cup of warm water

Filling

  • 1 cup of date paste
  • 1 tablespoon of sesame seeds (toasted)

Preparation

  • In a medium bowl, mix the flour, oats, sugar and salt and then add the Nigella seeds and maamool spices. Set off to the side.
  • In small pot, heat the oil until it becomes very hot. Carefully pour the hot oil over the dry mixture.  Using a fork, mix until it cools, then use your fingers to further mix it.
  • Add the warm water and mix the dough until well combined. Cover with a wet towel and cover the towel with plastic wrap.
  • In another bowl, mix the date paste and sesame seeds.
  • Form the date paste/sesame mixture into 19-20 small balls.
  • Uncover the dough and surround each small ball with the dough making sure the date paste ball is fully enclosed.
  • Place each into a maamool mold for proper shape.
  • Preheat the oven to 180°C (360°F). Place parchment paper on a baking sheet. Place the 19-20 shaped maamool on the sheet and bake for 27-29 minutes.
